Saptamana 14 - SUPA CREMA DE SFECLA ROSIE CU PERE SI PORTOCALA

Imi place sfecla! sub orice forma - cruda, coapta, suc, chipsuri si acum supa! Mai are si o culoare perfecta!

De obicei cam tot ce gasesti despre supa de sfecla este clasica metoda de preparare a unei supe crema de legume, doar ca ingredientul principal este sfecla. Ceva mi-a atras insa atentia - combinatia sfeclei cu pere. Interesanta asociere, avand in vedere ca ambele sunt dulci.
Daca sunteti fani de dulce, de aici cred ca pot incepe variatiunile de combinatii, tinand cont ca la tot acest amestec dulce ar trebui adusa o aroma contrastanta. Iata ce am ales eu: ghimbir si portocala, pentru un gust acrisor de suprafata.





















Ingredientele sunt simple:
| 500g sfecla rosie | 1 ceapa | 1/2 telina | 2 pere | 1 litru supa de pui | smantana | ghimbir | 1 portocala |


Exista si varianta rapida in care legumele se fierb toate de la bun inceput, insa eu am ales calea mai lunga si amanuntita, in care sfecla se coace la cuptor pt o ora. Asta va da un gust mai intens sfeclei.
Cand aveti sfecla coapta si decojita, puteti incepe sa sotati in unt ceapa si telina, cateva minute, dupa care adaugati perele si sfecla taiate cubulete, o lingura de ghimbir ras si piper, lasand pe foc inca cateva minute. Se varsa peste supa, adaugati 2 foi de dafin si putin cimbru si lasati la fiert pe foc mic pentru o jumatate de ora. La final pasati cu blenderul, moment in care amestecati sucul de la o portocala.
Puteti sa o serviti cu smantana (de preferat dulce).  Gustul e divin!


BEETROOT SOUP WITH PEARS AND ORANGE




















If you like sweet, here's the sweetest combination with a delicate sour taste given by the orange juice and spicy ginger. The process is simple, but if you have extra time you could spend it on baking the beetroot before boiling with all the rest of vegetables. That will give the beetrot a more intense taste.
It will take about one hour at 180 C for the beetroot to bake. After this you should peel and cut it, and start sauteing, for a few minutes, one chopped onion and a piece of celery, adding the pears and the beetroot cutted in small pieces, plus a tablespoon of grated ginger and some pepper. Saute for about 10 minutes, then add the chicken stock and boil for half an hour. You can also put some bay leaves and thyme.
At the end mix everything with the blender, pouring the juice of one orange.
That's all you should do to get this divine soup. For serving you can decorate it with cream and some orange zest - do not exagerate with that, or it will get too bitter.

Saptamana 12/13 - FRENCH SPECIAL

Februarie...luna reducerilor si luna decretata a periplurilor mele culinare franceze. Pentru cateva zile, le-am luat pe toate la rand: de la bucataria traditionala a bouchon-ul lyonez pana la simandicoasele meniuri gastronomice ale invataceilor lui Paul Bocuse, bifand pentru desert macarons si coulant au chocolat-ul la mama lui acasa si specialitatile clasice Mont Blanc si chocolat chaud l'african de la Maison Angelina - deschis de curand si in Lyon - www.angelina-paris.fr

Cu atata inspiratie in jur, mi s-a parut potrivita ocazia unui french special pentru 52 de saptamani. Cu ajutorul si indicatiile pretioase ale surorii mele Alexandra am pregatit o cina frantuzita - Escalope de foie gras si Ile flottante (cunoscut la noi ca Lapte de Pasare), acompaniate de un vin roze usor dulce, care a desavarsit gustul ficatului. Fiind o delicatesa, foie gras-ul se serveste intotdeauna la inceputul mesei, pentru a-l savura pe deplin, cand papilele gustative sunt cel mai receptive.
Sper sa mai am ocazia sa gatesc foie gras, cat despre Ile flottante, nu mi-am imaginat ca se pregateste atat de usor - intotdeauna l-am considerat un desert de restaurant, insa pe cat de gustos, pe atat de accesibil!



ESCALOPE DE FOIE GRAS

Tipul acesta de preparare a foie gras-ului necesita foarte putin timp de gatire si avand in vedere ca trebuie mancat cald imediat, orice garnitura aveti in gand, va trebui pregatita prima inainte. Am fost sfatuita sa aleg smochinele, dar ca sa fie un pic mai consistent am adaugat si un fel de sote de varza rosie.
Asadar, am inceput cu o jumatate de ceapa, un morcov mic si cateva fire de telina verde taiate marunt si calite in unt, peste care am adaugat jumatate de varza rosie taiata, o mana de stafide si putina coaja de portocala rasa. Nu le-am tinut prea mult pe foc, doar cat sa se inabuse.
Intr-o alta tigaie am gatit, fara nici un fel de grasime, 2-3 minute smochinele taiate (nu am avut smochine proaspete, ci congelate). Odata scoase, le-am pus direct pe farfuriile de servire alaturi de varza, pentru a fi totul gata pregatit pentru foie gras.
Escalopul de foie gras se pregateste intr-o tigaie incinsa, fara grasime adaugata, tinandu-l mai intai 30 de secunde pe fiecare parte, dupa care inca 2 minute pe ambele parti. La final se scoate, si din grasimea lasata in tigaie (din care se mai inlatura o parte) se prepara un sos, adaugand o lingura de otet balsamic si o lingurita de miere pentru caramelizare.
Se serveste imediat cald, eu am adaugat pe farfurie si rucola pentru a face alternanta intre gustul dulce al intregii farfurii cu gustul amar specific rucolei, iar ca element final, pentru o sarare de suprafata, un deget de fleur de sel sau sare marina (mai specific, ca sa fie total frantuzesc, fleur de sel de Camargue).
Et voila!






Pentru 4 portii:
4 bucati de foie gras
2 smochine intregi taiate in sferturi
1/2 varza rosie
1 morcov
1/2 ceapa
telina verde
rucola
otet balsamic
miere



ILE FLOTTANTE

Prima parte consta din prepararea spumei de albusuri. Se pune la fiert laptele impreuna cu vanilia si se tine pe foc mic, astfel incat sa nu dea in clocot. Intre timp se bat albusurile spuma, iar la final se adauga 3 linguri de zahar. Bateti pana zaharul se topeste. Cu o lingura se ia din spuma si se fierbe in lapte 1 minut pe fiecare parte, dupa care se scot cu o spumiera si se lasa la racit pe o farfurie. In momentul fierberii, bulgarii de spuma sunt umflati, insa pe masura ce se racesc se desumfla.
Un sfat practic pentru lenesi este ca albusurile spuma, in loc sa fie fierte, se pot pune intr-o forma in cuptorul cu microunde la nivel mediu pentru 1 minut. Spuma este gata pregatita, se poate portiona la fel cu lingura sau taia forme cu cutitul.

Al doilea pas este crema de vanilie - creme anglaise - cele 4 galbenusuri se freaca cu 1-2 linguri de zahar si se subtiaza cu 2 linguri de lapte. Se varsa in laptele deja folosit la fierberea albusurilor si se tine 10 minute pe foc mic, mestecand continuu pentru a nu se prinde.

Se serveste in farfurii adanci, turnand crema pe langa bulgarele de albus. In toate restaurantele am vazut-o servita cu topping de caramel, insa eu am preferat sa folosesc fulgi de migdale si coaja de portocala.

A special French style dinner:

ESCALOPE DE FOIE GRAS - This is a very quick and easy type of cooking foie gras - just by slightly frying the foie gras pieces (no oil needed) in a hot pan for 30 seconds on each side, then continuing for another 2 minutes per side. With just a part from the grease left in the pan, you should make a sauce, by adding a spoon of vinegar and a teaspoon of honey. The escalope has to be eaten quickly as it is still warm, so any type of side dish should be prepared first.
The common side dishes are cooked fruits - like figs, caramelized apples, mango or a simple ruccola/spinach salad or toasted bread/brioche. I choosed figs placed along to a sote of red cabbage. For this, I cooked in a pan a small chopped onion with a carrrot and green celery, then added a half chopped red cabbage. Just about less than 10 minutes are needed for cooking. The figs, sliced in quarters, were also fryed for 3 minutes in a pan, without grease.
The final overall sweet taste of the plate was well balanced by the bitter taste of ruccola.
As a fine dish, the foie gras has to be always eaten at the beggining of meal when the mouth can enjoy the taste at its best. The combination with a sweet rose wine was absolutely divine!

ILE FLOTTANTE (FLOATING ISLAND) - I eated this dessert only in restaurants and it alwayes seemed difficult to prepared. But on the contrary, it is very easy and few ingredients are needed. The preparation process is divided in two parts: the whites' foam and the English cream.
What you'll need: 4 eggs, 500 ml of milk, 5 tablespoons of sugar and vanilla.
Start with heating the milk and separate the whites from the yolk. Beat the whites until stiff, them mix 3 tablespoons of sugar. With a spoon, carefully place the whites foam into the hot milk, 1 minute on each side. Remove them from the milk pot and place aside on a plate.
It's time for preparing the cream, by whipping the egg yolks and 2 spoons of sugar together and then slowly adding the hot milk, used before at cooking the foam. This sauce is cooked over low heat for 10 minutes, stirring constantly.
It should be served in a deep plate, pouring the cream next to the spoon shaped whites foam, adding a topping of caramel or, as i did, flakes of almonds and orange zest.
